pasteurised if the product is to be just juice .
4. If the juice is to be fermented
, it is placed into the fermenters .
5. The juice is allowed to ferment either with its natural yeasts or its natural yeasts are killed and the juice is seeded with a champagne yeast .The fermentation can take anytime from 3 months to 6 months . The resultant cider/perry can follow a number of procedures from a single racking to a number of rackings , a possible filtration and possible subsequent bottling . All this can lead to slightly differing products .
